Learn how to make a Sabudana kheer (Just in 6 Steps) - Fizah Mughees

It is perhaps the most common type of sweet and delicious food served on fasting days. Anyway, one does not need to be on fast to enjoy it!! As name advise this traditional Indian sweet is made from small size sago pearls. This Sweet recipe is one of the easiest Indian dessert recipes and can be prepared in less than 20 minutes.



     ingredeants: 


1/2 cup Sabudana 

4 cups (1 liter) Milk

4 tablespoons Sugar

1/4 teaspoon Cardamom Powder (Elaichi)

2 tablespoons sliced Almonds (optional)

1/2 cup Water




Process:


1: Immerse sabudana in fresh clean water for 15 to 20 minutes in a thick bottomed pan or a saucepan. 

 2: Convert in to the next pan on your stove-top and allow to cook sabudana until you see all of them starting to float on top. They loose their denseness and become light. Cook 5 to 6 minutes on low to medium heat.

3:Next add milk and the cardamom powder.

4:Add sugar.

5:Continue to boil gently until the sabudana has softened well and the sabudana kheer has thickened. Take about 20 to 25 minutes on a low to medium flame. Mix often so that the kheer or sabudana does not stick to the bottom of the pan. Switch off the heat and add cashews and raisins.

6: Perform the creamy Sabudana kheer hot or warm or chilled. If you want then you can garnish sabudana kheer with saffron strands or some chopped cashews. 


Consistency:


This is a creamy and smooth kheer. 
Sabudana kheer naturally thickens after cooling, so keep in mind the consistency you want in case you want to serve it cold. If the kheer is very thick, so you can add some milk to it while serving. Sabudana kheer is easy to digest too. Sabudana is a normal food and is a pure starch. It has no other nutrients in it except high carbohydrates and very low protein, vitamins & minerals. Therefore, they are combined with nutritious ingredients and cooked.

 Sabudana is extensively used as a fasting food as it gives instant energy boost. This sabudana is one such dish mostly made during religious fastings.

Sabudana kheer is great summer food. It is think that to reduce the body heat and balance the body temperature. It is also confer to the babies and toddlers to boost energy.

Serving Suggestions:


Serve Sabudana kheer hot or warm. You can even refrigerate and serve it chilled. While serving garnish with nuts.
